Lamb on the Spit: How a Whole Lamb Is Cooked
- The rod runs under the backbone, U-bolt spine clamps hold it, and the legs are wired so the carcass turns as one piece.
- The coals are lit on site and spread thickest under the shoulders and legs, which take longest.
- The lamb turns over the coals for four to six hours, depending on its weight and the wind, and is basted as it cooks.
- The chef checks the thickest part of the leg with a probe, rests the lamb and carves it at the buffet.
