How Chickens Are Cooked on the Spit
Whole chickens are trussed and skewered along one rod. They turn over the coals for about two hours and are basted as they cook. A probe in the thickest part of the thigh reads at least 74 °C when they are done, and the juices run clear. The chef portions them at the buffet.
