Whole Pig or Rolled Pork Cut

A whole pig stands as the centrepiece at a large function; the quote sizes it to the guest count. A boned and rolled pork cut serves a smaller group and carves into even slices.

How the Crackling Is Made on the Spit

The skin is scored in lines, dried and salted before the pig goes on. The pig turns over steady coals for five to six hours. In the last hour the chef pushes more heat under the skin to blister it.

The R129 rate includes a whole pig or a rolled pork cut, roast potatoes in garlic, fresh bread rolls, the chef, the machine and the charcoal.
